I have a quick question on Vital Wheat gluten. Does it significantly increase the "performance?" I use bread flour for 法式歐包 using regular, cold fermentation & other fermentation, but have not have much success so far. My Baguettes are hard as rock. Still have not figure out why...P.S. Please feel free to type Chinese. I am from Taiwan, but I can't type Chinese in this machine.
